The rundown

Vancouver has a reputation for rolling up its sidewalks early, and there's truth in it, but the reputation only holds if you don't know where to look. Here's where the kitchens actually keep running.

1391 E 41st Ave. Open since the late 1980s and running on a schedule that stretches to midnight on weekdays and straight through on weekends, Duffin's has become the kind of place where the donuts are almost beside the point. The 35-plus flavours are legitimately good, Boston Cream and Maple Glazed carrying the weekday regulars, but the savoury menu is the real late-night move: hot tortas, fried chicken that genuinely competes with dedicated chicken joints, and a machaca that regulars have been known to cry over when the location briefly changed years back.

What we're doing/ordering: Order a torta and fried chicken over the donuts if it's genuinely late, save the donuts for the morning after, this is a 24-hour menu with two completely different reasons to show up.

The Pawn Shop YVR

The Pawn Shop YVR

1117 Granville St. An East-L.A.-inspired taco and tequila bar that's anchored the Granville Entertainment District since 2004, open daily until 1am with a wall of more than 50 tequila styles behind the bar and an open kitchen that keeps working through last call. The hand-painted graffiti walls and cozy bench seating read more nightclub than taqueria once the DJ starts, but the tacos, quesadillas, and burritos coming out of that open kitchen are built with the same care as an earlier-hours dinner service.

What we're doing/ordering: Grab tacos during the daily happy hour if timing allows, otherwise commit to the tequila wall and let the kitchen keep pace with the bar.

Pinky's on Main

Pinky's on Main

2420 Main St., Mount Pleasant. Opened by Ashi Minhas, the same owner behind Nelson Street's self-declared "OG rock and roll bar" The Moose, Pinky's runs a genuinely late kitchen behind its pink-skull signage and glass-brick corner. Smash burgers are the signature move, built for a crowd that's already a few drinks deep and needs something that survives being eaten standing up.

What we're doing/ordering: Order the smash burger without overthinking the rest of the menu, this room is built around one dish doing all the work at 1am.

Bao Bei

163 Keefer St., Chinatown. Chef Joël Watanabe's Chinese brasserie runs its kitchen until midnight on Fridays and Saturdays, which puts genuinely inventive food within reach of a night that started somewhere else entirely. The "kick ass fried rice," built around prawns, bitter melon, masala-preserved mushrooms, and papadam, does something structurally different from a normal fried rice, and the mantou buns filled with braised pork, hoisin, pickled ginger, and miso-serrano aioli hold up just as well as a midnight order as they would at 7pm.

What we're doing/ordering: Book ahead for a Friday or Saturday specifically, the kitchen's late hours are the exception, not the default, so don't assume a random Tuesday will have the same window.

Mr. Shawarma

Mobile, multiple downtown locations including Granville and Robson. A halal food truck operation that's built a genuine following on volume and consistency rather than a fixed address, Mr. Shawarma runs late into the downtown core on nights when the Granville strip is at its loudest. The Shawarma Rocket, flat-ironed grilled SAJ bread loaded with garlic sauce, tahini, and a choice of meats, remains the signature order, and the fries underneath every wrap option have their own dedicated fan base.

What we're doing/ordering: Check current location via the truck's social channels before heading out since the spot shifts night to night, order the Shawarma Rocket if it's a first visit.

The Pattern

Every one of these five treats "late" as a different kind of hour: Duffin's treats it as a 24-hour utility, Pawn Shop treats it as an extension of the party, Pinky's treats it as one perfect dish standing in for a whole menu, Bao Bei treats it as a narrow, bookable window worth planning around, and Mr. Shawarma treats it as wherever the crowd already is. Vancouver's late-night food scene isn't thin because the city sleeps early. It's thin because most of the good options require actually knowing which nights and which hours the kitchen's still on.
